You can see all the Lublin highlights in one day, but I recommend staying at least two days in the city to enjoy all the things to do in Lublin, including visiting those places away from the center. A bit outside of the Old Town but not too far from the castle , you can walk to Czwartek Hill, where you can find a nice vista of the historical part of the city.
